- Cook in a lightly oiled skillet for 3–4 minutes per side.

3. Turkey Zucchini Meatballs

Ingredients
- 1 pound ground turkey
- 1 small zucchini, grated
- 1 egg
- ¼ cup breadcrumbs
Directions
- Mix ingredients together.
- Roll into small meatballs.
- Bake at 400°F for 18–20 minutes.
Perfect for meal prep and freezer storage.
4. Spinach Mac & Cheese

Ingredients
- 8 ounces pasta
- 1 cup shredded cheddar cheese
- ½ cup milk
- 1 cup spinach
Directions
- Cook pasta.
- Blend spinach and milk until smooth.
- Stir into warm pasta with cheese.

5. Carrot Cake Muffins

6. Salmon Sweet Potato Cakes

Ingredients
- 1 cup cooked salmon
- 1 cup mashed sweet potato
- 1 egg
- ¼ cup breadcrumbs
Directions
- Combine ingredients.
- Form into patties.
- Bake at 400°F for 15 minutes.

7. Broccoli Cheddar Quinoa Tots

Ingredients
- 1 cup cooked quinoa
- 1 cup finely chopped broccoli
- ½ cup shredded cheddar cheese

Ingredients
- 1 pound ground chicken

Make-Ahead Tips
